If we're talking about pure skill and variety, Iwasaki dominates the entire anime industry. Only Yoko Kanno can touch him when it comes to that, but even she is being accused of plagiarism by everyone.

Er, I dunno if I'd say that, considering all his stuff from the past 6 years have been pretty formulaic. Like, Kawai is a composer who I'd say what you're saying about. None of his soundtracks sound anything alike, and basically all of them are fantastic.
Still, Iwasaki is more varied than a bunch of his peers, especially Kajiura and Sawano. However mostly I just think his music is really fun to listen to.
Joe Hisaishi is objectively the best. Everyone else mentioned in this thread is just treading water.
