Distilled water is crap, your body can't use it very well because it's devoid in minerals and if you distill it you'll have to somehow keep the minerals around, there's not only salt in water.

You can do it with a quality water purification system. However, that's not your primary source of concern.
C8 has a tendency to bioaccumulate, so you're going to see this be a problem in what you eat instead, particularly fish.
