I have no idea what the fuck I'm doing. All the info on that page doesn't help much. I just spent like half an hour trying to figure it out.

Make 4 straights or triplets and 1 pair. The tiles with the red character on the bottom are 1 through 9. The Chuu-Ren hand at the bottom of the flash mahjong page has all of them in order (1 has one line, 2 has two, etc.)

The wind tiles are under the Dai-Suu-Shii hand in order of East (Ton) -> South (Nan) -> West (Sha/Xai) -> North (Pei)

The dragon tiles are referred to by their color. They go in order of Red (Chun) -> White (Haku) -> Green (Hatsu)

If you can memorize those, and the yaku, you can play.

I confess that I play rather randomly, but the client is randomly discarding the tile I draw when I try to click anything, about once every round.

That can't just happen for no reason. Does it happen when you call on other people's tiles?

It's happened when trying to pon, chi, discard anything else in my hand. Luckily, I haven't had it happen when I try to ron, riichi, or tsumo yet.

Oh, I don't mean pon/chi, then discarding tiles. I meant trying any of those three actions occasionally just discard the tile I drew.

I've been really addicted to online chess lately, so I might as well learn how to play mahjong.

Perhaps you're double-clicking accidentally or something? It's a shortcut for discarding what you just drew. I think pressing space has the same function.
