Maybe there should also be a section for anime with a Christmas/winter atmosphere that have nothing to do with Christmas.
Spice and Wolf, Haibane Renmei, and Sora no Woto come to mind.

That might be a good idea, though it would take a lot more work than just with the Christmas theme. Just off the top of my head, I remember Upotte's 7th episode had a winter theme.

Specific episodes might be a bad idea since there are so many, but entire series shouldn't be too hard. Like even though SnW also has summer episodes, some of its main themes are forgiveness and peace, and Haibane is about sin and redemption and it has angel girls obviously. Spice & Wolf's setting is just very comfy fantasy europe with lots of winter episodes.
Mushishi might be another good one. I'm already struggling to think of more.

Specific episodes would actually be incredibly helpful; I can't tell you how many times I've opened the Hidamari Sketch folder and bumbled around for 10 minutes trying to find a good episode for the particular season
