When Hachikuji and Hanekawa spoke frankly about Araragi in Mayoi Snail, Hanekawa was pretty honest about things.

She said she stopped trying to rehabilitate him so hard because he was getting off on being chastised by her. Plus she makes a lot of good jokes you never see in the anime, so she would be pretty fun to be around.

It's pretty interesting to find out she and Gahara both had villains for their favorite characters in FMA.

They didn't. Only the way they are presented. For example, in the scene mentioned in your quote, Araragi is currently about to raise his hands to acquiesce to Guillotinecutter's demands. As soon as Araragi starts using his shapeshifting powers, there is a brief flashback of Oshino telling Araragi to give up his humanity. In light of that, it's also shown that Araragi ran recklessly fast to the fight with Guillotinecutter. Since the two scenes highlight the same "reveal," they were showed in tandem. The execution was fantastic.

It's a bit of both honestly, even if the anime did cut out a few scenes of theirs - and to be fair that happens with all the characters. Tons of Koyomi & Kanbaru banter in Nadeko Snake that basically kickstarts the whole "these two are weirdly perfect for each other" thing gets cut out for example
