She's still holding off on Suburu in hopes of finding somebody better after everything he's done including destroying a better girls heart and inside of trying to come up with an explanation as to why he's not good enough for her she just laughs like an idiot and says she's happy.

This is undeniably best girl now and you can't even argue against it anymore after what's transpired in this series.

Yeah, I can understand why you'd be conflicted at first, but if you discount the timelines that will never actually be, his relationship with Emilia was in a fairly immature phase before she returned to the mansion.
But then:

He just wrote and wrote about Rem until it had to snowball out of control and suddenly Subaru had his own waifu instead of the author's. Putting her into a coma was the only way to buy time for Emilia to catch up.
