There is also precedent for half saiyans having all the powers of saiyans, like the ability to go SSJ or gorilla mode if they are the less evolved types (vegeta, gohan, goku).

Toriyama did good by making Goten and Trunks, since he justified Universe 6 saiyans well.

I'd like to think the new arc is going to end with Goku wishing all the destroyed universes back, but seeing as how Goku didn't give a fuck about restoring Trunks' timeline maybe Goku will just be like "Welp that was fun lets go eat." instead.

I already pointed that. Goten, Trunks, Pan and Bra are the only exceptions and they aren't even pure saiyans. Also Gohan is a half-saiyan too and he born with tail about 20 years ago, while, in Universe 6 ANY saiyan have a lack of tail.
Universe 7's saiyans evolution happened like 15 years ago with Trunks' birth, but Cabba isn't even able to say when Universe 6's evolution happened, so U6-saiyan and U7-saiyan evolution works clearly different. As far we know, "SS Green" could be the natural next evolution of SS
