If you want a serious answer, then it depends on the version of Shirou.
Fate Shirou gets BTFO with ease by Shiki, UBW Shiki wins if he can activate the reality marble since Shiki will overload himself fending off the sword spam or cutting the reality marble and HF Shirou is near Servant-level physically thanks to Archer's arm so could probably take him on with just Kanshou and Bakuya.

Missing where I mentioned that he could in fact just kill UBW, I said that he likely couldn't do it without overloading himself or at least falling unconscious, which just leaves Shirou open to finish the job. If it was Ryougi then that's an entierly different story.
That's ignoring the point of self destruction though, which is Shiki's major flaw. Shiki would just overload his brain from killing so many swords.

He strains himself simply comprehending the lines on concrete walls, never mind concepts such as reality marbles. The main difference is comprehension, comprehending the death of a chair would be far easier than comprehending the death of a reality marble. He has to connect to a circuit which is the same of what he has wishes to see the death of, which is why viewing the lines of simple walls gives him a massive headache.
That's a good point regarding how long he'd last aganst the sword spam. My view is that Shirou would last long enough with the spam to shut Shiki down, since simply seeing the lines and points of objects he views as "not alive" (walls, chairs etc) already strains him he wouldn't last long enough to kill Shirou. Or like I said he fucks himself by killing UBW but rendering himself useless afterwards.

Is Shiki fast enough to cut the barrages of UBW? Remember, his Nanaya abilities only manifest when dealing with monsters. Shirou is a human (sword).

Assuming it's Nanaya or Shiki when he is Satsukinji (which is after Tsukihime when his eyes are too powerful for the glasses to work) then I assume he would be able to cut the barrage. It just comes down to wether Shirou's mana gives out from UBW or Shiki's brain overloads first.

Zero is a very good adaptation, 2014 is hit or miss at times but it's good and you get enough of the proper information from it, though the animes have a tendency to do a shit job of portraying Shirou and it doesn't end in this one. If you're new, I'd watch them and then if you're still interested download the VN.
Doubtful, Nasu himself said even Ryougi could only barely fight a Servant defensively and she's a few levels higher than Shiki, including her eyes.

Going by FGO canon, Shiki loses because his timeline ceases to exist after the human order prunes it, while Shirou at least is still alive because Fate path will always survive.
