hunter exam has no real fights, yorkshin arc has almost no fights, greed island is a card game, chimera ants as a whole is a deconstruction of battle shounen, election has no fights really (just one murder from hisoka) and dc arc has only one fight so far between two antagonists that was mostly indirect.

Like if it was released in a magazine that wasn't Jump, that put out seinen stories, I don't think anyone would find it very weird that it was there.
Togashi is an old school mangaka, with sensibilities towards violence that harkens back to when that kind of material was more acceptable. Plus he's a big fan of horror.
And HxH is a shonen primarily because it's published in a shonen magazine.

Sure, but you can say the same for tons of series. Would Kingdom feel weird in a shounen magazine? Would Yotsubato feel weird in a seinen magazine? Can you tell the difference between Itou Junji's seinen and josei series without checking? Demographic means pretty little, honestly.
