I always forget this: on the anime, how did Vegeta got blue without the ritual again? He just trained with Whis and, bam, full god ki-mastery? But why wouldn't he be able to become red - isn't blue just red + yellow? If he can get blue, shouldn't him be able to become red too?

In the anime, God was a temporary form attained via ritual that granted Goku access to Godly Ki. With refinement and mastery through angel-training, he was able to couple that GK with SSJ and become Blue.
Vegeta never under-went the ritual and effectively grasped and mastered GK from scratch, and did the same thing by coupling it with SSJ.
In the manga, it's the same for Goku, but SSJGod stays as a form past standard SSJs but prior to Blue. Vegeta gains access to it without the ritual because lollazywritingandfanservice.

I don't see how anyone could think the final beam clash with Cell was anything short of fantastic. The android/cell arc had a lot of problems, but that ending was not one of them. Cell coming back and immediately killing Trunks, bitch slapping an enraged Vegeta around like nothing, and crippling Gohan set the stage perfectly.
The actual beam clash was great because the whole cast jumped in and tried to help, with only Vegeta, once he got his shit together, making the difference. It was one of the few moments where we got a glimpse of Vegeta past his arrogant exterior.
It was also the last time Vegeta had a fucking mental breakdown because he was weak. Both times in the Buu Saga he went the extra mile despite recognizing his own lack of power. He's the only person in the series with any sort of character progression at this point.
