Usually, episodes are done only a scant few weeks in advance. Days, sometimes. The reason why so many BDs correct animation mistakes is because they were rushed in the first place.

It always starts being done long before airing. However the final deadline is determined by each episode's airing date. In short, sometimes things can go very wrong because the studio wasn't given enough budget for that production and thus have to start closer to the deadline, or shit happens that make the production late.
In general it's not rare to have the final episodes still being made while the first episodes starts airing on TV, and in some cases it can get worse than that wich will lead to QUALITY and cut corners (like the TV version of Bakemonogatari wich didn't had QUALITY but had entire shots removed because of that in episodes 8 and 9).
So yeah, if they were doing episode 7 in January then it's a good sign that it wasn't rushed.

So Bones aside, why don't studios just actually finish animating all of the episodes and then fucking release them? why spend months marketing only having 2 or 3 episodes actually animated, and start rushing like a motherfucker when episode 4 is a week and a half away? this of course isn't as possible with long running series, but getting a good bunch of a 12 or 24 episode series done before release should buy them enough time, am I missing something?
It has its cons and pros, but if you want to compare both studios, it should be on equal ground. Hero Academia 2 already has more outsourcing done to it than the entirety of Nichijou. Do you believe Bones in-house staff alone could do something like Nichijou?

As shit as the shows might be, watch Shirobako and the first half of Girlish Number to get a very rough idea of how studios work with scheduling and how publishers are the ones who often fuck them over.
That's just how the Japanese entertainment industry works.
It's all on an extremely tight schedule, and things have to come out as soon as possible.
A studio will only get the contract to work on a show through their connection and the promise that they can deliver the product in the shortest time at the lowest price.
Thanks to an abundance of anime studios existing, the producers can then simply choose the cheapest and most reliable option.
Money.
