Negima has a bit of charcter development and a lot of over the top fights if you can get past the first ten volumes of ecchi stuff (if you don't like ecchi, if you do you're gonna enjoy those too)
Tokyo Ghoul:re has massive power creep. It sucks though. You're better off dropping Tokyo Ghoul for good once you finish it and dont bother with :re at all.

HxH does a good job imho, the power escalation is quite slow tho, more like DB than DBZ for a good amount of chapters
drawings are terrible tho
HxH's characters are never gonna blow up anything bigger than a building aside from outliers like Meruem. Which is good, keeps things grounded and the fights rely more on tactics and wit rather than who can blow up the bigger rock.
The series that do however all fail like Bleach and Naruto. Naruto is especially disappointing because the story didn't start out with giant meteors and laser beams, there was actual tactics in the early days.

Only difference between shonen and seinen is the intended audience. There can be brutal and violent shonen with excellent character development same as there can be harmless slice of life shows that are seinen.
Like Shonen, but with rape.
