Surely a very minor disobedience of God's "orders," despite being human, doesn't warrant such a violent action from God? Why did God get better when Jesus was born, why create a man who will change the world, if interfering is something God isn't suppose to do?

I have no idea where you got this idea.
He created humanity. And he was their God and King. They then stole from him and he took away the benefits that his kingdom provided.
The first thing that happened after humanity lost favor with God was that he promised that humanity would have a way back to him. That a seed would come about that would crush the serpent in the head. Promising that the serpent who mislead humanity into treason against the King, would be defeated.
He then found a man Abraham who he made this promise to more fully. That through his seed all the families of the Earth would be blessed.
He protected Abraham's offspring, sometimes he punished them. As they were the chosen group of which that seed would be born, and they had to prepare the way for him.
Jesus was born though the promised family line. He lived a perfect life, unlike Adam. And he proved that humanity was worth saving. Becoming the savior of mankind and washing away the Sin that humans could not on their own.
