What is this obsession with Demon Kings? Can't a hero be summoned to defeat invasions by space aliens, horse archer barbarians, mole people, the Roman Empire, anything other than demon lords?

It's the most simple kind of story you can imagine. Good vs evil, presented in a very black and white fashion.

There's a long prologue in Maoyuu novel about how this "Hero vs Lord of Evil" thing has been in every human legends for as long as writing exists. It's a convenient and simple plot that writers can follow, develop, or satirize in a lot of ways.

Dragon Warrior/Dragon Quest is a huge deal in Japan. In DQ1, the goal was to defeat the Dragonlord. "Demon Lord" probably began as a reference or a way to to avoid copyright lawsuits from Chunsoft/Enix/Nintendo.

Fantasy worlds have black and white fantasy villains. Whodathunk.

Konosuba mocks and subverts traditional fantasy tropes. That's why the main villain has a cliche name. However, he hasn't been properly introduced yet, so he hasn't been mocked and subverted yet either.

modern japan is shit at fantasy, they can't make a straightforward adventure and would rather copy-paste JRPG garbage plot rather than play an honest game of GURPS/Strike/D&D/Savage Worlds without adding any bullshit rules.

You can be an evil enemy without needing to be a literal king of demons. Even the main villain of Narnia, the classic portal fantasy, she wasn't a demon king, she was just a really powerful witch.

Konosuba is a parody of /tg/-oriented vidya like Wizardry or Baldur's Gate. A more creative conceit would defeat the purpose.

Or, you could just make it a demon king. The whole point of the story is to have a story with a demon king in it, usually with a spin, it's not like as if anybody unironically makes a demon king story.

Well, there's not much point in creating a stereotypical fantasy world unless it's there to be parodied. I assume that's what you mean by fantasy, since there's plenty of fantasy out there, they just happen not to real settings.

Hans was also supposed to die to a combo of Megumin's explosion and Wiz's ice magic, but the ending isn't the problem.

Also every isekai claims to be a parody or a subversion or something new but they seem to think it's the maou genre, not the fantasy genre. Somebody ought to reintroduce Robert E Howard. Conan stories could probably fill LNs just fine.
