Because there was no story developed around re:
There was nothing for us, the readers, to be emotionally attached to. In fact, the only "attachment" we as readers had to it was either via some characters we were familiar with and through it being a personal item for Kaneki's memory.

It was essentially more of an attachment for Kaneki than it was for us. This has kind of been a big problem for Ishida in TG:re. A lot of the story can just be all over the fucking place, nothing beyond the CCG is a recurring place of interest, and there are ten trillion character storylines to follow, with some being completely meaningless.

But we never had any real connection to the "new" coffee shop. We never had build up or any advanced depth about what made that place special.

So of course no one cares.
