It's attacking the direction of the logic as opposed to the logic itself. If I said "one plus two equals four", you would (likely) question the result "four" instead of the operation "one plus two". In this way, you're automatically assuming that "one plus two" is 'correct'. Regardless, "one plus two" is always 'correct' insofar as it does not support a conclusion. If it does support a conclusion (other than the right one), the operation is still correct in-and-of-itself, but not the correct operation for the result. 1+2 will always be true; =4 will not always be true.

Shirou is saying that he doesn't disagree with what Archer says, but that it doesn't apply to him (because he isn't Archer). Which is true.

It's a bad translation of another awkward Shirouism; there was no such distinction between 'right' and 'correct', because Shirou uses one word. Shirou can't school Archer on logic because Archer actually knows what he's talking about. And Shirou doesn't question Archer's 'righteousness' (seigi) because EMIYA is actually a goddamn superhero/ally of justice/hero of justice/whatever (seigi no mikata). Neither befits Shirou, a character motivated by feelings.

Shirou means "You're correct but that's all" or "You've got the facts right but I don't agree with your conclusions" or "You're not wrong, you're just an asshole". Saber condensed this shit with the parallel to herself. It's basic perspectivism.

He knows his description is correct, but he considers it a non-issue to his goal because none of that is reason for him to stop. He knows where things are going, and he's okay with it.

Also, everyone stop trying to obsess over the difference between "correct" and "right". The terms used are 正しさ (correctness) and 正しいだけのもの ([only] a thing that is correct).
