When people apply the term to shows themselves, they are referring to shows that intentionally try to provoke this feeling by creating characters most likely to appeal to "moe sensibilities".

There is no set definition for moe because no one, even in Japan, can identify when or where the term came from. The leading theories are that it either came from fans giving a pet name to Tomoe from Sailor Moon or a general catch all term popularized on the internet in the late 90s. Both of these are plausible because the Japanese have a tendency to make shortened names for popular things (even when the original name is already short like in the Tomoe example).

But beyond this, still no one can define what moe actually is. Especially since it has become so generalized that it can be applied to anything from a cute girl to a personality type to all of KyoAni's shows. Your definition is just one of many under the generalized umbrella. Like the term 'casual' in gaming, moe has become so generalized its pointless now.

And if we're just going by popular consensus, more people would identify moe as being related to general cuteness than your definition.

We may not have a scientific precision to accurately describe what we're talking about, but most people can feel a difference between say K-On and Idol Densetsu Eriko, and not simply because they're two different shows from two different decades.

First of all I wasn't trying to make a diagnosis, the same way when someone explains the elements of a romance novel which makes your first point entirely off base. Secondly, no shit Eriko and K-On are two different shows in two different genres, that's not my point, and whether or not Eriko is sexualized or not isn't the point either. The point is both shows revolve around cute young girls but their intended relationship with the viewer (from the creator's point of view) is different. One is intentionally moe the other isn't. Whether or not you have feelings of moe towards Eriko or not is another question, because you can have those feelings for anyone. The point is one was made through the lens of a certain subculture that has embraced moe which is what gives it it's particular sensibilities.

Once again, Japan doesn't have to cater to the west. Japanese video games didn't completely focus on the west after seeing western sales sales overtake domestic sales. Only specific companies like Konami and Square did. And they paid for it over time, gradually learning their lesson.

It's perfectly fine to be weary that some anime studios would try to cater to the west. But the change to a wider market is already happening. So instead of getting mad at the messenger, send letters to the Japanese publishers and tell them not to start making shows that pander to the west.
