Erina is the reason why Senzaemon has asked Jouichirou to send his son to Totsuki. If not for Erina's "plot", Soma wouldn't attend Totsuki in the first place.
You can remove Megumi from this manga and Soma would still attend Totsuki and become the 1st seat. Nothing would change.

The reason why she doesn't accept Soma in the first place is because she has the mindset of only accepting perfection cooking embed to her and because of Soma's background she doesn't want to accept him at Tostsuki since she only accepts chefs who show perfection which is why she didn't accepted him during the exams. For Meats case, Erina specially told her to not fail otherwise she knows the consequences (watch S1 ep 5 at the end of the ED) so her throwing away Meat was justifiable but I could understand why/how people would miss that so I don't blame you for not knowing.
