If you're referring to the adaptations DEEN's 2006 anime is a mediocre mashup of 3 routes, Zero has horrendous pacing and animation errors out the ass, the UBW film was a mess albeit entertaining, and the UBW anime is an atrocity with all the anime-original garbage they crammed in.
Ufotable might have shinier animation but believe it or not DEEN's is more competently directed. Neither are very faithful to the source, though if you asked me yeah I preferred Stay/Night.
The VN is still the best.
The problem is the continuing miscommunication between strongly vocal 'camps' that disavow the validity and/or value of the other, rather than state anything of substance about the nature of the works themselves.
There are many 'versions' of both works. It is meaningless to say something like "FSN is bad" if your sole experience with the work is the visual novel. In the same right, it is meaningless to say "FZ is bad" if your sole experience with the work is the anime. No, the Fate Zero anime does not have as much textual substance as the FSN VN. Of course it doesn't. It's not a visual novel.
There is no value in speaking on either work unless you are familiar with the totality of one or the other. How many people, do you truly imagine, have actually sat down for 30+ hours to listen to the Fate/Zero sound drama? How many people have seen the manga adaptations of FSN? How many people have read the Fate/Zero novels? How many people have read through all of the potential decisions in the FSN VN?
What is the purpose of hearing - much less responding to - the views on both works of someone who is not familiar with all of the aspects of both works?
I will not posit a view because of the implications of the above: what are the chances that a person critically responding to my perspective will have met the prerequisites necessary to create an informed opinion?

You can just watch the anime for Zero and get a pretty good experience. It's entry level. Though it also has its own unique advantages over F/SN, a lot of it is just being a sensible viewing experience. Which certainly isn't bad.
You need to play the VN to experience Fate Stay/Night. There is no way around it. And trying to go through the VN can be a mess, anyway. That goes double if you have prior experience on the series. Watching Zero, UBW, or the 2006 series will spoil a lot of the story.
But if you can bother, the VN is great. Does a lot of interesting stuff, even if it's kind of old hat by now.
I prefer Stay night because VNs are better then anime for me, way more immersive.

They are two completely different works that have their own merits, so neither is really better than the other. F/Z is a tragedy, meant to instill a sense of catharsis from watching everyone fail at their ambitions and dreams. F/SN is an inspirational story about ideals, with three routes that explore three different answers. Fate is a message about supporting others to help achieve your ideals, UBW is pressing on with your ideals against heavy opposition, HF is the courage to abandon your ideals for new ones.

From what I seen, Stay Night is very much better than Fate/Zero. In Zero, the characters besides Rider/Waver barely had any personality besides their ideology, and there was no development for them. I don't know, but even when I only seen the UBW adaptation, I could tell that the author put much more effort into making his character more dimensional and make them have poignant character arcs and than of course the visual novel proved that to be true. Although even if Rin was my favourite in the UBW anime, they omitted a lot about her character and her character conflict (same with a lot of characters like the mc for example), but regardless, I prefer Stay Night

I hear this all the time, but no one says what they specifically didnt like. Here are some anime original scenes:
Illya backstory, which offers a cool look into the Einzbern household
Caster backstory, which fleshes out how she was summoned and met Kuzuki
Kuzuki backstory, which gave the least fleshed out character in the franchise at least some background
The epilogue episode, which was just fun, and doesnt mess up the rest of the story
I played through every VN route along with every potential decision or Bad End back in 2008, long before the Zero anime came out, and caved into marathoning the Zero novel back when the Zero anime was on its seventh episode.

Zero falls apart when you start scrutinizing it with anything more than a glance. Most of its characters are weak, with only exceptions being those ported over from Fate. Fate itself holds up better, given that it actually explores its themes instead of wanking off to characters acting out of character so Uro can jerk.
Feast of kings if best example of this. If you actually start thinking about arguments presented, story's favorite Iskander starts sounding like an idiot, to say nothing of Saber doing 180 on her Fate characterization just because Urobuchi likes bullying.
Literally quality aside, holy shit are UBW fights better. I usually don't give a shit about visual spectacle, but i had to drop my Zero rewatch on Saber vs Deermund. It's just so damn slow compared to explosiveness of Fate fights that its actually hard to watch.

Also, Urobuchi cant keep abilities consistent. How the fuck does Saber transform a motorcycle? She has no ability that even comes close to doing that. Berserker can apparently shapeshift, an ability he uses once toward the end of the story. So its really just an asspull.
First it apparently combination of Saber using Prana Burst and Riding. Second is same ability that kept Berserker's stats hidden, but due his madness it can be only used as shapeshifting by the order of command seal.
The Berserker thing is true and valid, but you 100% know that the motorcycle was just the butcher jerking himself off to how cool a mega-motorcycle dodging rocks and doing 360° spins while driving 300km/h would be.

Urobuchi on his own can't create something popular that would resonate with the masses, his brand of pandering is niche. Even in his home industry it's pretty niche, he was simply "that" guy. But since Madoka, producers realized they can combine his writing with the right elements in order to make something "popular" that the masses would enjoy and would have a lasting impact.
However there is a good chance he'll be writing puppet shows for the rest of his life, he said it's his favorite medium by far.
How does Gae Dearg work? It pierced Saber's armor cause it was made of mana (does this apply to everyone? Would it go straight through Berserker or Gil's armor?), it short circuited Caster's book which instagibbed all his monsters, it cleaved straight through Berserker's pole, and then it disintegrated his plane.
Both of his spears in legend both left unhealable wounds so this is something they made up. It's like Rule Breaker, except that had more clearly defined rules, gets more mileage in the story, and nicely ties in Medea being the witch of betrayal.
And an untrained teenager defeating a demigod King of Heroes is also someone jerking off to how cool the idea is. Don't act like Zero's methods are so markedly different.

Well to be fair, Shirou's victory over Gil is more of those "you landed a couple blows at you that would've killed if not for the fact that I am a demigod, so you're pretty good I guess" victories. It's not like Shirou actually bested him for real or anything.
He was about to kill him after the whole "You're pretty good I guess" speech, but he got GRAILED. And he probably would've killed Shirou still if not for Emiya. Plus, didn't they do the whole "with every blow, I'm getting stronger" thing at the Einzbern mansion duel? Shirou was buffed to the point where he can cast Raw Anus, in addition to UBW.

I just checked the novel to refresh myself; the motorcycle doesn't even transform in the novel. It's just described as having been modded to fuck by Kiritsugu, and the only thing Saber does with it is spam prana so that it Goes Fast and doesn't slam into walls in a millisecond.

An extraordinary amount of it stems solely from distaste for the jokey-er characters and Servants. Very, very few anti-GO posts on either Sup Forums or /vg/ ever cite anything about the story. They complain about the silly designs of the Servants and about the fact that Grand Order is a phone game. That is, in all honesty, about it.
Seriously, check the archives - you will not find anybody complaining in the vein of "Orleans sucks because [plot point] and [lore counterpoint]" or whatever; it's almost undiluted in the vein of "Nasu just wants to sell cowtits and make bank off of mobage waifus from greasy otaku".
To be frank, earlier parts of the story are really weak, although they are written by other writers who were also told not to try too much because mobage.
