a) anime has set episode limits. 11-13 just isn't enough for most shows.
b) they get constantly reworked in production- It's possible there were ideas that would better explain certain plot elements, but never got implemented because reasons.

There are hundreds of other reasons why reading as a hobby is dying all over. E-books aren't saving it.

When I was younger I read at a 300pages/hour pace, now I am at about 200-250.
That is at most 4 hours for one book.
