After tricked into reading the VN, my main complain in UBW route is that Shirou was able to use a fucking reality marble without becoming a vegetable for weeks or months.
At the first 1/2 of the the VN, every time he traced something or enforcing something, he feel pain like he's gonna die. He also broke dishes and bowls everywhere.
But conveniently, he was able to use UBW to kill Gil and be fine.
Another point I want to make is that his magic circuit can't hold all the pragna he needs to use UBW. EVEN IF HE FUCKED RHINO.

Shirou's magic is actually heretical as fuck. He can create something out of nothing, breaking one of the supposed "rules" of magic. His tracing is essentially a degraded form of one of the True Magics. Real projection magic doesn't function like Shirou's tracing at all. Normal projection magic would only copy the form, and would quickly disperse into the air, which is why Projection Magic is also known as Gradation Air and is considered to be a useless magic. The only reason Shirou's projected weapons can't last indefinitely is because he's copying existing weapons and the world recognizes them as phantasms that shouldn't be there. It's the same theory as Reality Marbles, the world senses a contradiction and applies a correcting force. Meanwhile, the teapots and other random crap he projected in his shed never disappear because he wasn't trying to copy anything.
His UBW essentially has an unlimited supply of every material on Earth (he can't trace Excalibur or Ea because they are made from materials from other planes), which he can use with his tracing to make ANYTHING. He makes swords because UBW can record all the information about any sword he sees and automatically create a reproduction that is nearly as strong as the original, all the information he needs to trace a perfect copy is available in UBW as soon as he look at a sword. Archer's memories flowing into him and getting a look at Gil's weapon warehouse ensure he will always have plenty to choose from.
He would also spar with Taiga when he was younger, she even mentions it in the show. He was also part of the archery club, which he quit right before the start of the show.
Would he still have this ability if not for Avalon?
No, Avalon forcefully rewrites his origin into 'Sword' which is what gave birth to UBW.

Because Archer was fighting Berserker 1v1, and Berseker is at his strongest when he's constantly attacking. Only reason Gil won was because he was constantly aiming at Illya, which kept Berserker on the defensive. Gil outright says the Barserker would've stood a chance against him if Berserker disregarded Illya's safety.
