Can someone explain to me what happened between the first and second series
because a lot changed between the original and sequel , and I feel like I'm watching two completely different unrelated shows.
Was there a web-series or something that tied the two together?

It's a part of the LN title trend to have a chuu2 title to convince readers to purchase it. They are more or less straightforward with "ReLife" or "ReZero", being redoing life and redoing progress from square one.
All of those chuu2 excessively long LN titles such as "Will you like me if I'm cute but slutty?" or "That Time I Got Reincarnated as a Slime" are used to grab the consumers' attentions when they are perusing through the shelves, so as to convince them to pull it off the shelf and read it.
