Okay so back in the day we had all of these long ass manga shows that all had at least 200 chapters. We had rurouni kenshin, dragon ball, yuu yuu hakusho, hokuto no ken, hajime no ippo, and so on and so fourth.
Then dragon ball ended, and we had the fall of battle shounen with all of the cheap knock offs that missed the point. It was the age of Toriko, Naruto, Bleach, One Peace and so on and so fourth. These manga defined their generation in a way but they were all bad if you really give it a thought, and if we weren't kids when we first watched them we wouldn't give a fuck about them. Now there's a new generation of battle shounen, which is better than the previous one, but it's still missing the mark. Shougeki no souma, one punch man, boku no hero academia are all under-ambitious in comparison to the older generation.
What caused the downfall of epics about saving the universe or redemption spanning over years and years of the heroes' lives? Why is everything so grounded these days?

on the main issue: times change, get over it. in the 90's the authors did not have as much competition, plus: manga was the main source of leisure of the japanese. today there are internet, social media and the paper industry is in decline. note that almost no title reaches 1 million in the oricon weekly rankings.
Older battle shounens were most simple affairs than the more character focused newer ones
I feel that One Piece is actually more expansive than it's predecessors since those older ones where just jumping from arc to arc while OP tries to bind the arcs into one grand whole with its world-building.

Dragonball sucked towards the end, and the big three tried to copy that formula of bigger always being better. It's the smaller scale personal stories people care about. Naruto should have stayed as team 7 doing missions and slowly working their way up the ranks. Bleach should have stayed as slice if life ghostbusters.

Postmodernism. People think meaning is myth, so they don't like epics about heroes who live by strong, dichotomous values because they appear "unrealistic" or disingenuous. That's the entirety of the cause behind the change. It's a self-defeating misinterpretation of deconstruction.
I would also argue against the idea that everything is "so grounded" these days. Real life and actual human interaction are infrequently as deranged, depressing, dark, meaningless, and/or as open to interpretation as most postmodern media would have you believe. The obsessions with making something "realistic" by totally eschewing concepts of meaning, truth, or authority have absolutely crossed over into the realm of surrealism and absurdity.
The dumbfucks writing this drivel don't even realize that, if their assertions on meaning were true and things were as dark as they imagine, then any normal person stepping up into the shoes of a "hero" is arguably larger than life and "more" than the rest of us who choose to do nothing. It's a matter of coming full-circle, where people have over-thought themselves into antithetical pseudo-intellectualism.
Honestly, that's what some of the current young adults want in them, but pre-teens and teens are usually all about world crisis and "epic" showdowns. Kishimoto wanted to do exactly what you described, but editor didn't let him. Bleach wasn't really popular in its initial phase either. These are facts. But I think OPM is trying to do this "battle shounen for adults" thing.
Dio is not a good villain and most naruto antagonists are a million times better written what the fuck are you talking about?
Naruto is (especially up to Pain) a lot better than most older shounen. Fucking Hokuto no Ken is a bore, YYH is boring derivative shounen shit.

But what made super length shounen great was not the villains. The whole was greater than the sums. Kenshin is a good example so I'll stick with it.
The Tokyo arc is about Kenshin failing to figure out what he should do. He didn't figure anything out while wandering and he didn't figure anything out while not wandering. The Shishio arc was his opportunity to test if his vow to never kill again has any meaning. The Enishi arc was about him trying to find redemption. While like almost everybody the Shishio arc is my favorite arc, what makes the story great is the feeling of a story that stretches over a long period of time with many little bits that build up to something big. That big thing in this case is Kenshin's peace of mind and redemption.
Aizen was actually one of the best characters in the whole thing.
It's just that the story and power levels that tite was forced into(Far away from his real ability, characterization and telling smaller more human stories) grew well beyond his ability to conceptualize them and he fell into navel gazing madness.

The problem is that no one knows why those stories did so well and the fact that there is a shit ton of stuff out there to keep people interested if what they are on now is shitting the bed or is terrible.
At this very second, the shounen genre, even generic shounen, is so barren today that it's hearbreaking. Fucking OPM which is seinen is called shounen.
A non porny more wholesome action shounen aimed at the shounen demo including adults would do so well right now it would be insane.
