I am Zone 7 as well. We buy cornmeal, but we go with potatoes(both regular and sweet (meh) ), cabbage, cucumber, tons of tomatoes, beans, some beets, and Okra. We have some apples (which do well) and cherries (which do okay). We also buy a ton of peaches from some farmers near us where it a little warmer and can them.
We generally do Carrots/Potatoes/beets on new land to break up the soil a bit, then rotate the other crops in.

Goats, pigs, chickens, and rabbits are good homesteading animals. Bigger animals you will most likely need a butcher to clean.
Rabbits are good also that you can sell a few as pets and earn some decent cash.

Nice do you try a lot of pickling or preserves? All of those crops keep well. I managed some peppers, eggplant and tomatoes last year. I bought a lot more types of seeds for this year tho. I just planted some radishes to see if they would work for breaking it up but I didnt know potatoes or carrots could form in this clay soil. It gets dense. I am considering smaller potatoes or something like thumbelina carrots that can form well in it.

Potatoes are eaten except the ones we use for planting next year.
We pickle a lot of the veggies, the apples we have is a older type that is "ugly but good for pie making" so ends up as applesauce or pies. the Cabbage becomes sauerkraut, we make the beats into soup and can it, tomatoes get processed into sauces and so on. We can a ton of stuff. Potatoes and carrots will break up the soil a good bit,you might not get the size you want but they are doing hard work for you.
As for the wives - we have varied traditions, we also have a lot of language mixture at times. For the most part, the wives vet the new ones, as they have a veto power of sorts. The most recent wife (the canadian) was actually much more of "You are going to marry her" from the wives then me seeking her out. And it been a great blessing that I agreed to do so.
Modern young american woman for the most part are not very female. I don't claim to be a great cook, but when I can easily outcook them that is bad.

There are thousands of apple types. as you can make your own apple types by planting a seed as apples are spread by grafting. Also you need more then one type of apple to get fruit.
For improving soil, Carrots do well in really poor soil, and you just have to work with it and keep improving it and rotating crops . Two things to recall is there should be a coroptiative extension office that can help you, and I recommend reading some of the older books from the late 1970s as they are a bit more down to earth and less about selling the dream.
Heck, the USDA guide from 1978 is still decent primer and can give you good ideas.

I go to a auction one county over. I also privately purchase stock. I actually have not had to buy chicken or rabbits in some time outside that I bought a buck from far away to give some out crossing to my rabbits this year. This year we will be eating down our goat stock.

We also grow tobacco, but we don't sell any of it. It mostly there to keep my 2nd wife happy as she grew up on a tobacco farm. However they are good ornamentals and they keep one type of beetle we have issues with away. But do check with the extension office on what bugs bother plants in your area.
