Swiss German is not an official language because it differs greatly from region to region. It would be impossible - or very hard - to standardize it. That's why we resort to High German for writing, that way we can communicate with Germans and Austrians as well.
It's also kinda cool to have this secret language that expats are unlikely to ever learn.
