First things first. You're going to need to watch the Tsukihime anime before doing anything else in Fate. It's like the bedrock for the entire franchise.
Next, you should watch Prisma Illya, but considering you don't have that much time you can skip safely to Carnival Phantasm which overlaps with Prisma in many places.
Fate/Zero is the prequel to F/SN, so again something you should watch if you have the time.
The 2006 DEEN anime is considered to be the quintessential Fate adaptation, so if there's one thing you must watch from this list, it's this one.
The UBW movies are something you can watch if you have time left over or I don't know if you have time to kill while flying or riding the bus.
