My parents told me the reason some afghani/Saudi/lebananese have blue or green eyes is due to the Greeks and romans invading the Middle East forever ago, Greek and Roman soldiers (w/ green & blue eyes) then mated and sometimes married middle eastern women. So generations and generations later their Greek/Roman traits still show in today’s middle eastern children, mainly in the form of light skin or blue/green eyes.

That’s what I thought too. But randomly you’ll have families with every member having green or blue eyes. Or you’ll have families with brown eyes, maybe a distant relative or two with green or blue eyes, but the immediate family will have all brown, give birth to their 3rd kid and randomly they’ll have green or blue eyes. And it’s not even that uncommon.
Example: my mother has green eyes (Saudi) - her mother had green eyes but father had brown, half her sibling were born with brown eyes, half with green. My father (Lebanese) has brown eyes, every member in his senpai has brown eyes, except for one distant great aunt.
Brown eyes are dominate gene. My brother has dark brown eyes, I have blue eyes.
It’s weird but there’s tons of 100% Saudi girls with the lightest piercing blue eyes. People always just traced it back to Greek/Roman invasion and showing generations down or skipping generations. But afghani’s (if they don’t have brown eyes) almost always have green eyes.
