The yuan isn't even an open currency, only 1% or less of foreign reserves are made up of yuan. This is like speculating on whether or not everybody will start using euros to pay their drug dealers, and saying the moment your local drug dealer says he is willing to take euros its going to kill dollars in the entire local market. There's a reason the Gold Standard was abandoned, and it isn't because only the US didn't have enough Gold.

Aside from yuan being closed, China itself is not a very open economy. A part of the reason China services the USA for all of its dollars is because of the power dollars have in international trade for their aforementioned qualities. Maybe in the distant future yuan would become global reserve currency, but that would be a gradual process over decades which would see the American economy transform as well. It's not going to crash the American economy.

If you withheld it from them their economies would have collapsed as banks couldn't access the immense amount of money they had tied up in assets denominated in dollars. If they stopped supplying it that would be a good way to get countries to start moving over to the next best option, Euros.
