Better question, if I wanted to finally get onboard the JoJo train, do I have to watch all of the old stuff, or can I just start out with Diamond?

You read from the the start. You may watch the first series of the anime if you like (parts 1 & 2), but even still I'd recommend reading. Do not watch the anime for part 3 and 4 before reading.

Each part works pretty well as a series on its own.

You should read (or watch if you really don't want to read manga) all of them as reading through it all puts everything into perspective and you won't know who some of the characters are if you don't read from the beginning.

Part 3's anime is most certainly worse. The first too parts its more 50/50, partially because the manga versions are just not particular good and because it's simply better adapted than 3/4.
The first half of part 3 is better as an anime if you think it's worth sitting through the extra viewing time (it takes about twice as long to watch it than it does to read it and it's pretty bland either way) but the second half pales in comparison to the manga, DIO's World especially. If you must, download the DIO's World OVA from the 90s instead of the anime, but it's different enough that you should still read it.
Part 4's anime, despite the praise people gave it, is pretty shit. The manga is one of the best shounen manga of all time.
