The only servants that were humiliated in Stay Night were Gilgamesh and Medea, none of these ones were asspulls(un my opinion) Medea was just like a Mage from an RPG, her magic is fucking strong but she's horrible at close combat, Gilgamesh just lost because he was just too arrogant and prideful.

Shirou can only beat Gilgamesh in a straight fight. Sieg is the only convenient non-Servant who can defeat multiple varieties of Servants 1vs1.

Gilgamesh was the only one humiliated by Shirou and that was only because he refused to use EA until it was already too late because of muh pride

Well. by what I remember, it was never foreshadowed that Kirei was strong enough to fight against a servant(even if it's the assassin class, aka, the weakest, they're still way stronger than any mage or executioner of the church) so it can be considered an asspull, and to be honest, I really don't care if it was an asspull or not, it was still pretty awesome.

It was when Assassin used Zabaniya and was briefly stunned by the shock of it not working that Kotomine was able to take advantage and pin him to a tree with his Black Keys. However, both acknowledge that Kotomine has no means to finish Assassin off.

Not quite. Assassin was so certain of his kill from his noble phantasm that he didn't even bother to dodge since he knew Kotomine's attack would do no lasting harm. He was never stunned from shock. Though he was shocked and asked for an explanation after the fact before he faded away in defeat.

Taking multiple lives at once from Herakles is referenced in Fate and HF roughly four times, so it's not like it just came out of nowhere. The real asspull is Shirou projecting Saber's str rank, which she only gets from having Prana Burst, and chopping of Herakles' arm.
