They don't. They just de-emphasize the nose, because a small nose is cute. Also, because japanese facial structures tend to have smaller, flatter noses and less-sunken eye sockets making it look like the bridge of the nose is very shallow. In other words, your pic isn't inaccurate.

In reality, many asians tend to have very prominent WIDE nostrils, like black people. They hate that about themselves, so they just rather not draw it. This is also the reason they don't like to draw squinty slanted eyes in anime

That's because they are deluded and hypocritical too, Japs on average have wider and bigger flatter ugly noses, they remove all the Asian facial features from their characters and when they have to depict whites they have to use "stereotypical" traits on them otherwise they look identical to the Asian ones.

as a drawfag, because noses are fucking hard to get right. plus, as said, they serve very little in expressing emotion, so they can be removed with little to no consequence, like how some characters only have 3 fingers (plus thumb) in western animation. it just saves money.
