If you look at old victorian era photographs, you'll see that the shadows are somewhat washed out, my guess is that Kyoani tried to achieve that look, but forgot that photos in that era were black and white, so even with the crushed blacks there was still depth in the image. The filter Kyoani is applying to the show makes everything look flat, the DP is to blame here.

Violet Evergarden is an ok show, but for Kyoanus' standards it's subpar.
That's what wrong with the show, the wrong studio is producing it and hyped it too much, increasing expectations exponentially.

I dunno, TFA seemed like more of the middle-of-the-road movie to me; basically made to just be "more Star Wars". TLJ felt much more like them trying to do something more interesting with it, even if the results weren't as good as they could have been. And even though it wasn't as good as it could have been, it's also nowhere near as crap as it could have been.

I'm just going to have to fundamentally disagree with you. The plot might not be perfect, but it's a far cry from crap, and I think its worst scenes compare favourably to the worst scenes of Return of the Jedi.
