My one complaint though was why they omitted the movie making plot from the film since it's kind of essential for Shoya and the groups growth, why even bother including anyone who isn't Uena, Shoko or Shoya if you're not going to give the rest development.

Because everything after the X's fell off was tacked on and wasn't needed to tell the main story.
Everything else was told through subtle, realistic characterization.
In fact, the movie is pretty much the definitive experience of the story. Manga is supplemental reading at best.
