But regardless of the physics backing it up. It is undoubtedly used as a litterary crutch in the Fate universe.

Many-worlds interpretation comes from a solution for (or rather denial of) the wavefunction collapse under quantum mechanics. String theory is a mathematical structure and doesn't, by itself, have anything to say about wavefunctions collapsing or not collapsing.
They are both part of quantum mechanics but not directly related.
You might be thinking of M-Theory which diverged off of basic string theory, but M-Theory universes aren't really relevant either, they're just 12th dimensional universe-membranes wobbling in phase space, not parallel universes of the same make with different results (many-worlds).

It's used as a plot mechanic rather than a crutch nowadays, quantum time-locks have entered part of the cosmological structure. Basically dead ends in a VN are truly dead ends, with them being cut off from the tree of time as it grows out so that the universes don't multiply beyond what the world and Alayashiki can manage.
