How have these subs been so far? It not being picked up by anyone legit has really put me off of watching it, which sucks because I've been so hyped up to watch it. I heard that whoever's doing them is just using the manga as a script or something?

It's just a funny comfy comedy series, and the author never wanted it be more then that. Can you imagine if Saiki went the reborn route and turned into a battle manga?

I finished this one and am still typesetting another. I also have a SaiTeru comic made by the same person as last time. Not as good as the first one, but still found it cute.

But there are other anime like Saiki that are famous(at least here), like Nichibros and maybe GTO ("maybe" because there is a plot going on). I guess one of the motives is the way it aired first time, some people might be discouraged by the 120 episodes with 5 minutes each, without knowing the 24 eps version.

I'd imagine people probably got turned off by the cheap looking promo art and people who eventually tried watching it just can't get into fast-paced comedies. Which is a damn shame because I fucking love fast-paced comedies and barely able to talk about it to anyone.

Where did you see that? They're releasing the episodes with 24min, but in the same way s1 did, with them separated in ~4min skits. And as far as I know, there will be 24 episodes.
