I can't forgive the absolute destruction of magic as a viable play style in DaS3, so can't really give it my vote as the best.

DS3 made a lot of improvements to the PvE gameplay mechanics, mainly in that the movement and melee combat controls are more fluid, the co-op matchmaking is vastly improved, I don't have to worry about no one being able to summon me if I level my character up too much
The PvP, however, is pretty terrible, it's too easy to constantly chug estus with impunity, magic is in no way a viable tool in combat, the darkmoon covenant is absolutely fucked, gankers are fucking everywhere, even when you're using a red soapstone, the complete lack of poise makes spamming R1 with a fast weapon one of the better tactics in pvp, pretty much everything that was considered a cheap tactic before is now common practice, encouraged even. I feel similarly about this trilogy as I do about the STALKER trilogy. The first one was a flawed masterpiece, the second made some improvements, but was overall pretty lackluster, and the third one kept all the improvements the second one made, while also fixing everything they did wrong, yet, despite the improvement in the raw gameplay mechanics, it just feels like it's missing something. In Dark Souls' case, most of the bosses are just rehashes of a boss in a previous game in the series (Crystal Sage), the areas feel bland, where are the amazing areas like Ash Lake?
Casting is OP as fuck in DS3, you just have to cap your Int/Fth. It's even good in PvP if used creatively. Hell Soul Stream regularly one shots multiple opponents in the same shot.

Everything is OP if you cap your fucking stats. Its the other 99% of your playtime that actually fucking matters. Magic was viable from the start to the finish of the other DaS games. Not just the fucking finish.

They're there, it's just that Dark Souls 3 shows absolutely no restraint in it's boss and level design. When we look at Dark Souls 1, it sets up a very small scale. Asylum, Burg, Depths, Parish, Blighttown, etc. And the best view you get is from the top of the church. So when you finally see areas like Anor Londo or Ash Lake, they have an impact. Dark Souls 3 tries to do that twice, when you first reach Irithyll and when you first reach the the Kiln, but they have no impact because the very first area you go to after firelink is a huge castle city with the best view in the game.
Sometimes less is more.
