Shit, even Doom, a game that specifically avoids having any kind of coherent story beyond demon killing, has several novels based on it.

The Halo books were actually really good for the most part.

The writing in this was pretty amateurish but it was still a good ride.

The Halo books by Eric Nylund are pretty damn good

The rest range from okay to atrocious.

This right here. The fall of reach is a decent military SF novel.

The Forerunner trilogy, by greg bear, is more like regular SF its so different from the games.

Some of the new shit is awful.

The Mass Effect ones by Karpyshyn were good
The first 2 Splinter Cell novels are great
The Hitman ones are alright, second is weird cause 47 has a love intetest
The second Resistance novel is pretty good, first was boring
And the Elder Scrolls novels are good

It focuses more on Beth, Will and Paul than it does Jack as well, unlike the game which was almost all about Jack.

I've only read the Warcraft Lord of the Clans book. Even though I was like 13 and English isn't my native language I could tell that it was garbage. I liked warcraft, though, so it was alright.

Most of the Halo novels are fucking superb, with the Karpyshyn Mass Effect ones.

The Fall of Reach is one of the best things I've ever read.

Not really novels but the Ass is Red comics are pretty good.

I've read 2 of the three Doom novels, the MGS4 novelization just to see if it was better than the game's storytelling (it was by the way), part of the first Elder Scrolls novel, a few of the Assassin's Creed books (the one about Altair and the novelization of Brotherhood) and part of the first Dragon Age novel which so far is giving a nice bit of backstory on Loghain and makes Maric into an actual character instead of just a generic king. All of them were pretty good except the Elder Scrolls one which was boring as shit and the second Doom book which feels like filler to get to the third book.
