I've owned every console from Nintendo my whole life. And while each one has provided some stellar games, its going to take a hell of a lot for me to invest in their next offering. The wiiu had so much potential with its abundance of peripherals, but absolutely everything was so completely and utterly under utilized.
I still believe that the motion controls and touch screen has so much potential to do really cool shit, but its implementation has been bungled over and over.
And yea, I think the Gamecube was the last console of Nintendo that I sunk a lot of time into. Then again, I owned a 360 and a ps3 briefly that barely got any play time so take that as you will

Wii gets shit on a lot, but it's still under my TV with the PS4 and gets consistent use even now (mostly due to my Super Mario Kart addiction)

Super Mario Galaxy was boring as shit. It gets rid of the adventure aspect that existed in 64 and Sunshine then replaces it with a jump from planet-to-planet mechanic filled with unmemorable platforming.

The N64 doesn't even have 100 games worthy of being called mediocre. It has an extremely limited library with only a handful of truly excellent titles. I love it too, but it has a much weaker library than the Wii.

It's hard to describe when they "peaked" because they had multiple peaks. The NES was utterly dominant and revolutionary, the SNES was extremely good, the N64 was largely shit, the GC was a bit better but still didn't have enough games and the Wii had tons of 90s-style nip exclusives (2D platformers, arcade ports, RPGs, unique weird games etc) thanks to the fact that it was hot shit with normies. So the last time they peaked was with the Wii, and I doubt they'll ever have that much success again. That's because they did. The NES practically invented the console gaming industry as it is today and all their succeeding platforms until the GC basically continued the conventions they set forth. Unfortunately they started gradually losing ground to the competitors (Sega, PlayStation and Xbox) until they just gave up and started pandering to casuals with the Wii.
