Obvious bait aside, GoG goes through the effort of selling their games with patches/fixes so they can actually function on modern hardware.
Stuff like the older Fallouts and Oddworlds won't work unless you get a patch for them.

They sell the game and apply the fixes (and sometimes makes their own) so make sure the games you buy work.

There are DRM free games on Steam and you can just copy them like you said. KSP is one example. Sadly they're the vast minority and you still need the client to download them in the first place.

GoG galaxy isn't special though. Galaxy is an unambitious, undermaintained, very unspecial piece of shit. Use it to update games and nothing else. Maybe not even that.

I tried that, most games just freak out and crash from missing files.

I like Steam because I have loads of games on it, the few online friends I have are on Steam, it has good discounts.
I'll buy games on GoG if they're cheaper, but if it's the same price as Steam then I'll get them on Steam so I don't split up my library more than is neccessary.
I don't like Origin and uPlay since I'd have to run those too to play shit and having games there too would split up my library.

I don't use steam for fucking anything but playing my games, but there's actually a lot of functionality in it, that ties together well with the social aspects.

"Making things work" isn't really an issue for modern games, and like it or not, older titles is a much more niche market. It is absolute bullshit how valve just lets assholes fire and forget them on the service without ensuring that they actually run on modern systems though. Valve should be sued for that.

GOG galaxy is pretty shitty. Add a nice overlay (last thing I've seen was a bad overlay that you add as dlc for The Witcher 3), add a browser to that overlay and add fucking cloud save. There is absolutely no point in using Galaxy beyond the more comfortable download (downloading all those individual parts without galaxy is annyoing).

But it's totally optional. That's the point. They're only doing it for Players who want the convenience of Steam.

Galaxy isn't even fucking drm. It's just an interface you can use to interact with and auto update your games. Even if you have galaxy you can start it up without it straight from the .exe without launching galaxy or anything.
