Reapers are not invincible, Sovereign needed a geth fleet or just the Citadel fleet would have fucked him up. If you choose to hold off the 5th fleet, then it's more or less just the one human fleet that takes down Sovereign.

Even if the Reapers would eventually win, they'd want to reduce their casualties. Just think of what losing a single big Reaper means to them in terms of their mission of preservation. This is why they usually do the relay trick, because it makes it easy. Attacking the Citadel would just cause too much loss to be worth it. So they do the next best thing to keep everyone divided, they attack the home worlds. And until Shepard makes all his deals and alliances, it was a pretty damn good plan that would have worked. It played on a specifically organic emotional response of self preservation and favoring one's own species over others.
