I did until 3. 4 and 5 seemed OK, but didn't really look into it.
Basically, evil corporation abducts ninja for evil purposes, ninja's sister defaults on her duties as leader of ninja clan to go find big bro, DoA tournament takes place, ninja sister rescues ninja brother, who upon getting back to clan is forced to honor the tradition and treat hero sister as a traitor, so he sends half-sister of subordinate ninja clan to hunt her down. Meanwhile, evil corporation is up to shenanigans again, DoA 2 takes place, and Ryu Hayabusa, who is tasked by ninja bro to protect ninja sis from his own clan, saves the day while the other ninjas are having their animu drama. All other characters are just kinda there at this point. Only honorable mention is Helena, who is trying to take back control of evil corporation to make it great again. Her mommy is killed, however. How sad. Then in DoA 3, for a reason I don't remember, the eeevil real daddy of ninja half-sister, who is still hunting ninja sis, has to be stopped. I don't remember who wins that one. Also, at some point, ninja sis is cloned because she's the most powerful of all or some shit. In DoA 4, french corporation heiress finally decides to bring down all of doatech, because why the fuck not, I guess. DoA 5 is more ninja shenanigans, and the ninjas do not even enter the DoA tourney, which is why Jan Lee ends up winning of all people.
Where are you getting any DOA1 info from? I don't remember that game having endings for characters. Not sure if DOA2 did either.

There's a bit more in the remastered versions that were released as DoA Ultimate. But in any case, I think it's from 3 onward that things start to retroactively make sense.
In simple terms, DOATEC is evil (mostly a guy named Donovan) and trying to create the ultimate weapon. That's the whole reason for the DoA tournaments. That's also why Hayate was abducted, why the Tengu was released, why Omega was created, why Kasumi was cloned, and in the end why Helena and the gang get rid of DOATEC. Everything revolves around that.
