Link is an established character within the lore and narratives of the games he's appeared in, and has always been Male.
He's not like some Skyrim blank slate with no personality, at least not completely. He has his own character with predetermined origin, personality, goals, motivations, and personality.
It's varied from game to game as the series has evolved, but one constant has always been that Link is a young boy (the same hero reincarnated) who goes on an adventure that involves saving a princess. That's his shtick, the timeless story that is at the core of every Zelda game.
All adding an option to customize your Link's gender and/or appearance would do is fundamentally fuck up the basics of what makes a Zelda game a Zelda game, and cheapen an iconic video game character and put him down to the level of shit like "Mass Effect Guy", "Minecraft Guy", or the aforementioned "Skyrim guy".
I don't actually think they could have made this Link any girlier, it would have just meant that you can't get away with having Link run around in only boxer shorts.

Yes. I'm not saying that they should have forced you to play a female Link. It just should have been an option to choose male or female at the start, and the story could have been designed in such a way so as to it not mattering which gender you chose. Zelda games for the most part don't really focus on Link's sexual interactions with other characters anyway, with the exception of a few games where romance actually plays a part.
This is what makes me think that BotW's story must have elements that are actually dependent on Link being male. The fact that he is specifically called Link in this game, and you don't get the option to name him, probably a lot about why a female option was left out.

I don't think it would work with the style of Zelda. Link has always been kind of a cuck. Almost everyone telling him what to do is some chick or another. There is always some flirting, some cutsie talk, and insinuation that has been a staple since at least Link's Awakening.
A female option would change the mood of the series. I don't think the characters and their interactions would be as much fun. "Link" would probably be far less interesting if there was any sort of variation to what the writers specifically put in place.

I believe that Aonuma is very much so aware that we want a female Link, and I don't doubt that we will get one in a future game, but for this game, no.
I think the reason is because Aonuma has already gone rather far with the plot and the story calls for Link to be a male in this game, or else they would have to go back and change some important plot related elements. He probably wanted to say that, but didn't want to give anything away. So he came up with the BS Zelda excuse.

Koroks are in paintings in ALBW. So it's not impossible for them to exist in Decline.
The Master Sword is only in the woods by itself h it in the Decline timeline. In TP's timeline they moved the entire Temple to woods. In WW's timeline they move the Sword to the castle and then WW Link moves it to Ganondorf's skull.
Ganon was also in a very similar situation that BotW describes. He's on the verge of breaking out of the seal in the many years following OoT because Link couldn't land the final blow on him in OoT's Defeated ending beforehand.
OoT Link is also the only Link whose defeat is made to be a big deal.

In a nutshell:
Link is a classic Hero's Journey protagonist, purposely boiled down to the essentials to make him relatable to anyone. He's a young boy, usually immature and inexperienced, who despite being severly underpowered and underequipped. As he finds his courage, meets new people, masters new skills, and builds his arsenal, he is able to beat the odds to save his friends/the kingdom.
That's why he's the embodiment of the Triforce of Courage, and this character arc of him maturing into a hero is pretty consistent in most (but not all, like MM/Oracles) games. Newer entries have been progressively doing a better job at both establishing this and giving link more personality. Especially Wind Wanker and Squidward Sword, where the character development is far from subtle. (Linnk leaving home to save his sister is one of my favorite moments in all of Zelda.)
Link is a silent protagonist, but that doesn't mean he doesn't grow over the course of his adventure.
