look, it's not fucking hard at all to learn. what is hard, is having the mental fortitude to torture yourself playing the game adequately. you can learn how to manipulate the UI, you can learn what to bring on embark, how to set up food/drink, later an economy, later a military, you can learn all that shit step by step.
but actually doing all of that at the same time and micromanaging all your dwarves through a system that's far more complex than it needs to be? why the fuck would you put yourself through that?
the bottom line is, dwarf fortress isn't tough to learn, it's just systematically reading the shit that's in the guide, there's no "skill" to it, it's just soaking in the knowledge over time. the only actual skill is the autism you'd need to want to keep a 40+ dwarf fort running for even as little as an in-game year.
my advice, stick to adventure mode, much more fun, even if shittier than most "roguelikes"

I'm not sure why people are saying Europa Universalis, but HoI3 / IV are definitely complex.
