There's still one big reveal GRRM told D&D, and they said it's just going to happen on the very end. It's either some White Walkers plot twist or Jon killing Dany to fulfill the Azor Ahai prophecy.

I think that'd be pretty neat. Could be set in Essos and have you visit places like Old Valyria, The Sorrows, Asshai and Stygai. Those are some of the most interesting places.
If those are too far apart, then I'm sure just Old Valyria and the surrounding areas would suffice.

A cliffhanger ending wouldn't be something I'd be completely opposed to.
Consider what having a horde of otherworldly arcane conquerers with ties to godlike entities did to the Warcraft franchise. It distorted the reach of what was at one point a military conflict between human kingdoms and orcish clans into a story of godlike beings who plan to destroy all reality and whatnot, rendering the original conflict of the series absolutely irrelevant.
Having the story end with "Winter approaches, this is the state that the human lands are left in, but who knows what will happen now" would be less bad than "Jon Snow is now the Arbiter of the Elements, and will face the God of Night in single combat in outer space!"

I thought it was a well done scene, but I couldn't help but share your thoughts when I was watching it.
Cersei was bound to do something dramatic and stupid, but it was clear that D&D just resented having to keep all these characters in the story. It was like the Riverlands, where they brought the Blackfish into it just to kill him off so people would stop asking where he was.
