Samurai Jack's powerlevel is pretty inconsistent, the guy who lost to the guardian didn't really do anything impressive beyond kicking a missile. Sure the guardian would have still won but its as if Jack wasn't even trying.
The guy who beat the princess and bounty hunters was a god of all senses who could basically see into the future and outpace anything.

It's hard to say for sure, but maybe it was just so relatable? It was designed in such a way that it was meant to feel timeless, and it really does show.
It also helps that it never really fell into seasonal rot like Spongebob did although there's no denying that the School seasons were weaker than the older seasons, and ending in what can only be described as one of the most satisfying endings to a cartoon I have ever seen.
