The kick is actually much better for beating someone trying to parry than just blocking, since if they're walking backwards with their guard up they're moving fast enough to just outrange the kick. Also most of the actually good shields can withstand at least one kick.

The shield kick should be used when you know they already expended some stamina, don't just use it whenever, let them roll around or whiff like an idiot, then kick their shield, stun them, and clown them.
I like to stun people in PVP and then not take advantage, just to prove I can beat the guy without it. I also like to win without estus if they are using estus, and to beat people who parry spam without parrying myself.
As for using a shield, I use twitch movements to constantly be ready to block, but also restore stamina faster, and to evade kicks.
I only block to drain their stamina and counter, if they are using an element that still damages through the shield then I don't block, I smother them and roll, or hang back let them whiff, then counter with an unexpected R2 or twitch Sword Art.
All of the games are good, Dark Souls2 is great as well, they are all fun, stop whining and enjoy yourself.

I've never lost when I've been Darkmooned (~8 times) but I get shit on by the people in Irithyl (~20% win rate). I think it's mainly because I'm really good at punishing healing and get super panicky when I get low on health and can't heal. I also use a UGS so that's not exactly helping

Poise doesn't need to be "fixed", it's working as they wanted it to, just differently as it affects armour during heavier weapon attacks. Maybe they could have worded the description differently to show it was changed (even though the description still fits it's new effect), but the change isn't much different to how Vitality has become Vigor, or how Resistance's effects are on different stats now. I personally think that the remnants of the old school Poise system that were found is because enemies still work that way, and they probably didn't bother removing the code when porting the old engine over.
Also funnily enough I'm doing the exact same. Shit's been way more fun than I expected and far more effective than people had led me to believe with all their complaining.

I'm like three weeks out of date on this stuff so maybe this is too, but poise essentially let's you win trades in hyper vs hyper situations.
Either way, glad Dark Souls 1 style poise isn't coming back. Passive hitstun resistance rewards sloppy play for low to medium skill players and makes high end play entirely punish based. There's other issues with Dark Souls 3 PVP, but the decision to move away from that type of poise system was the right one.
