Depends on the universe and what ingredients are used to make it.
Most western fantasy games where it's medicinal, it probably tastes heavily of herbs, probably bitter.

Zelda given that Chu extract seems to be the main way to get potions it probably tastes a bit metallic, with other earthy tones. Mostly unpleasant like drinking dirt with blood rubbed in.
