You are both right, I think. Kain knew what to do up to a specific point, thanks to the time machine, and planned all that he could. Then things got muddy, people started to interfere to change Raziel's destiny, and he could just hope that Raziel saw reason and actually followed his steps.
His death at the end of Defiance hit him hard all the same.

He didn't wanted to die in sacrifice either. But killing himself would just leave things at the mercy of Destiny again.

He was right not to leave things to destiny, because he knew that his destiny had already been fucked up by the pillars being corrupted at his birth. If he sacrificed himself the world would be doomed and nobody would be able to do shit abut it because he was the only one with the knowledge and ability to set things right.
Even if he saw the time streams, they were chaotic and changed with every step. Also the mere presence of Raziel was already a big fuckup in the reality.
Raziel had to rebel against Destiny too to work anything out.

What i LOVED about Soul Reaver saga is how every character is morally gray as fuck. Even Raziel with his self righteousness, he's still taking bloody vengeance against everyone.

If he didn't sacrificed himself into the Soul Reaver Kain held, no God Killing weapon could exist and Kain would have never seen the Elder God.

If Raziel is the only one with a real choice, why is Kain the one who seems to make all the actual decisions? Even as a player you're only ever given an option when you're Kain.

Not really, at the end of Defiance Raziel was being imprisoned by the Elder God. Mobius' corpse laying there provided him an escape but he also knew what he had to do in order to set things right. I.E. become the purifying soul to allow Kain to be the Scion of Balance. But you're right, Raizel could have just stayed imprisoned there for all eternity, but we all know how much Raiziel loves fucking with the Elder God.
