SnS is apparently one of the best this time around. I think people roll striker with it? But what the fuck do I know.
I prefer guild even though I know striker is probably better. SnS is most certainly new and improved though, and I think of Ainsley every time I oil up.
This will probably be the first MH I don't do all of the village quests in. Way too many gathering/slay x little monster quests. But the game is very fun, I hope they flesh out styles more in MH5

Still better than Tri / 3U in terms of required gathering bullshit, that opening / tutorial segment is cancer.
Longsword good for a new player?
I'm a MH babby, I only played 4U and I never really touched ranged weapons beyond the bow a bit, so I'm not sure what all has changed, but the HBG in Generations is really fun, if you ask me.

I'd say Switch Axe, Dual Blade, or SnS would be good for beginners. Perhaps GreatSword, but it can be a tough weapon to learn when you are still figuring out spacing and monster movesets. Hammer is simple, but to use it effectively you really need to be hitting the monster's head, which means it can be a bit tough to get good with, until you are more comfortable actually hitting a specific part of a monster, rather than just hitting wherever you can
Literally any melee weapon is good for a new player. Insect Glaive has a few other backwards systems so probably stay clear of that so you can focus on the core mechanics / menu stuff, but at that point every weapon left is fairly easy to learn.

Is it any good?
Don't use it online until you memorize attack ranges; it will trip other players and lower the teams damage output. Good beginner weapons are Sword and Shield, Lance, maybe Greatsword, and the Switchaxe. The first 3 have guards while the last 3 have great ranges. The SnS can also let you use items while the weapon is unsheathed which may save you a few times.
When you do go online be courteous, don't attack the head if their is a hammer user, and please don't attack sleeping monsters

Completely new to the series, I got a little frustrated starting out because there's no tutorial and I just need to read help documents and the text in this game makes my eyes hurt.
Is there any way to optimize the camera controls? I went on the first mission, had to fight some veliciraptor thing, and the fight was nothing but a constant struggle to have him stay on the screen
What's a good great sword in the beginning? Currently at 3 star village quests and running with tetsu armor

Swaxe is a nice fun versatile hack slash weapon, there are very few ways to use it wrong, assuming you're using sword mode as much as possible. GS is very slow and doing actual damage really relies on landing the major strikes that can tough for a beginner to land.
You should have a panel on the bottom screen with the monster's icon, tap that icon and it makes it so whenever you press L the camera focuses on that monster
This is the easiest way to manage the camera for the most part, you'll probably want a n3DS or circle pad pro if you want more precise control than that without clawing the virtual d-pad
It depends on your nintendo. A N3DS has ZR and ZL buttons which you can set to horizontal camera movement and makes everything so much better by going to pause>options and pressing ZR/ZL control settings to type 2
you can also set it so that tapping the L button turns your camera to the monster, you can control the whole camera with a Dpad on the screen which can make control a lot easier
The first two ranks are always the worst, but it's necessary to build up your item supply and get you accustomed to the game. Don't give up

If you have an OG 3ds, I can't recommend the circle pad pro enough, user. If you're having trouble just keeping the monster on screen, imagine how annoying using an aiming reticule would be without a second analog stick... It changed my life. HBG for life now.

It has one move that is a big charged up explosion, but you're probably fine using that mostly when the monster is stunned or trapped or down anyway. Most of the time you're just hacking with the axe to build up power, then switching to the sword to do more damage until you run out of power. Mastering it means you are able to switch strategically between the weapon shapes mid-combo and manage your charge while also avoiding damage and utilizing your charge shot. It was the first weapon I mained in monster hunter, so much so I'm actually tired of it and may not touch it again this time around...

This. I wholeheartedly appreciate how much they improve and simplify gathering and simpler quests, but if I'm fighting monsters, I'm bringing fucking heavy weaponry.
What's the best skills and bias for prowler?
Also, how do I into lance? I've always wanted to learn how to use it.

teach him emergency escape from a support cat and last stand from anyone who has it
Skills and biases are gonna dictate what you are using the prowler for... so don't bring a gathering prowler with gathering skills on a monster hunt.
As for how to lance, just get comfortable with movement and blocking. Pretty much all you do is poke poke poke, with occasional shield bashes to the monster's face if you can. As I see it, Lance is about staying near the monster, keeping up a constant poking assault, you've got little dodge hops you can use to move around, and if things get dicey, a shield to protect you. Then if the monster hops away from you, you have a sprint move that you can use to chase and then either do a jumping attack, or a superstab attack. Lance is great, it just takes some getting used to because it's a bit hard to maneuver with compared to some of the other melee weapons. Just remember it works essentially in a one two three rhythm, so you can poke dodge dodge, poke dodge poke, that kinda thing.

Is there a particular way I should be doing quests and tracking my progress?
I'm focusing on doing 2star village quests before doing 1star academy quests. Am I doing it right or should it be the other way around, focusing more on HR before village stuff
It doesn't matter really. If you want to play by yourself, do the village quests. If you want to play online with others, do the guild quests.
The academy quests are meant for multiplayer so the monsters will have higher hp. It's better to do the village quests if you're solo but feel free to do the academy quests

They're pretty different. I like both a lot. GunLance is a bit "tankier" than lance, you can't do the triple dodge hops, only single side or back hops. It has heavier hitting attacks though. Who doesn't like making a monster's face blow up?

Have you ever had a monster leave just as you were placing a trap, then chased it to the area it ran to, then had it immediately run away again back to the area you placed the trap? This happened to me once the other day, and I thought it was very strange, as grateful as I was.

I've been farming from the Moga Bee Yard for a good 20 quests now and I haven't gotten a single one, but plenty of Great Hornfly. I need at least four.

Just got the game, I downloaded all the dlc but it doesn't seem to show up in-game unless I'm missing something.
