I used to glitchless speed run Ninja Five-O and Mark of the Ninja.
I did it because I found it extremely satisfying to play those games fast. I've never felt compelled to do it on any other game, barring DX:HR:DC when you've got all the augments is ridiculously fun.
There's just something satisfying about making all the perfect jumps/cuts/hook throws and it becomes pretty fun to watch.

For streaming sometimes it's interesting to hear someone's perspective on the game and have them comment on it. Or seeing the crazy shit some people can do in games. I don't watch let's plays much but Nanosuitninja for instance is pretty interesting to watch as he's really really good at Crysis, better than me at it, so seeing what he does is cool and how he takes advantage of game mechanics.
Another let's player I watch is MetalCanyon, though I've only watched his X-COM Apocalypse playthroughs, though for kind of similar reasons, he's pretty good at the game and his comments are generally interesting. X-COM is also really stressful to play, at least for me, so sometimes I just don't feel like playing but can still watch someone else play the game. Maybe that too just doesn't make any sense to some people but it's how I feel.
But again, I don't really ever watch let's plays and really haven't in quite a while but sometimes there are people who are fun to watch.

I can understand watching pre-releases and stuff I guess cause gaming mags don't really exist as they once did, but watching other people play shit like f2p MMOs, or older games is just way over my head. I cannot even comprehend it, the shit is RIGHT THERE for you to try.
Streams and some LPs are nice to relax after a long day with when there isn't much time.
Especially with games designed for long sittings, so you can watch a bit of it or a chunk from a Streamer whose personality you like for reason (reason) and watch some more later after another long day, such as in a 5-day work week and getting home late consistently.
As for dedicatedly watching one, no fucking idea, I skip most of the ones I'm subbed to on Youtube unless I'm in such a situation.
When I'm too depressed to play, I shitpost on Sup Forums. I don't know what kind of lack of motivation it requires to watch someone else play a game.

I mean its not as popular as your standard Ubisoft title, but I'm genuinely surprised that they managed to produce such a diamond. The maps are great (house in particular is amazing) and each class has a purpose (Thermite can breach through reinforced walls, sledge can smash holes into shit, mute can deploy an electronic jammer) There's so many counters that everyone feels viable (except maybe twitch, but I'm still testing her). That's enough of me gushing over this though, you should go look up some gameplay if you're interested.
